Does anyone else not get the hype behind making Cody this "ultra chad" who gets bitches? Half the chicks who he's banging in these canonically had guys they were interested in, so why not just show them banging those guys like as shown here - LeShawna x Harold? Alejandro, Duncan, Trent, DJ, etc.

Eh, hentai/cartoon porn doesn't really care about 'canonicity' when it comes to parody/fanart. A big part of the fun is that the porn doesn't have to be about the canon couples we see in the shows/comics/etc. It's like fanfiction that way.

Ultimately, HermitMoth has the right to create whatever porn parody he desires, using the characters he desires. Now, if we're talking about commissions, then that's a whole different thing.

For Cody being an "ultra chad" as you put it, I'm not sure where it originated. He does have his moments throughout the first few seasons, though I think it's largely due to some popular fanfics that featured him having a do-over or some other time travel thing. As a character from the canon, I think he's also one of the better choices to be an everyman character that people can work with, since the others have very distinct tropes/personalities. It's very similar to why Jaune from RWBY gets so much attention in fan works (aside from being one of the few male main characters of course).
